The arrival of chef Aiden Byrne is breathing new life into The Grill. Hushed formality has been replaced by buzzy mealtimes & readers agree it’s an excellent choice for top-of-the-tree dining. Byrne’s track record includes a lengthy stint as Tom Aikens’s head chef at his Chelsea restaurant & it’s a pedigree that shines through in every dish. Brave combinations, such as a sensational starter of roast scallops teamed with a white chocolate risotto & truffle shavings, reveal a tremendous skill that’s confirmed by all that follows, from squab pigeon with pickled cabbage & sweet garlic butter sauce to pot-au-feu of lamb infused with the flavour of New Forest pine & served with pickled anchovies. Drawbacks include very steep prices (£15 for a starter & double that for a main) & a misjudged Scotch baronial decor like a set from Brigadoon. On the plus side, there’s a blockbuster wine list & professional service.

A new name on the London scene, Aiden Byrne first came onto Michelin’s radar when he was head chef at Adlard’s in Norwich, where he won a star at the tender age of 22. After spending three years in Suffolk, Byrne met Tom Aikens while working at Pied à Terre & he went on to head up the kitchen at Tom Aikens for two years prior to moving to Danesfield House in Buckinghamshire & then relaunching The Grill at The Dorchester in November 2006. Born in Liverpool, Byrne is certainly one of the most promising chefs working in the capital at the moment, having built up a strong fan base for his food which is notable for lightness of touch, complex flavour combinations & visually strong presentation.
