Begin by loading your plate with exotic salads, vegetables & hot dishes at the counter, but don’t overdo it. The main attraction is the cavalcade of sizzling skewers spiked with anything from roasted pork loin to peppered steaks, which are carved at your table by flamboyant ‘passadors’. The meat keeps coming, but you can pace yourself with the aid of a two-sided disc – ‘green’ means you’re ready for more; ‘red’ signals that you have waved the white flag.
