Skye Gyngell made her name heading up Petersham Nurseries restaurant near Richmond but walked away from it in early 2012. Spring will be open for lunch and dinner, serving a regularly-changing menu of seven starters, seven main courses and five puddings based on fresh, seasonal and simply-treated produce, which was always the star of the show at Petersham too. Dishes in mind for September’s opening menu include grilled scallops with corn purée and chilli oil, and damson ice-cream with rice shortbread, while the kitchen will also make its own butter, bread, yoghurts and cordials. A focal point of the restaurant will be an ‘indoor garden’ in an open glass box that will seat 24 diners.
