Occupying an arch that used to house a mechanic’s yard near Haggerston station, the new branch of noodle joint Tonkotsu will follow the same formula as the Soho original. Exposed brick, naked light bulbs and an open kitchen will form the backdrop for proceedings, while communal tables and vibrant Japanese textiles will help to capture the Tokyo spirit. Expect a no-nonsense menu based on the idea of doing one thing really well – namely steaming, slurp-worthy bowls of ramen. There are likely to be three variations on offer, including slices of pork belly atop thin wheat noodles with a soy-seasoned egg in a rich, long-cooked broth of pork bones. Just add some handmade gyoza dumplings, deep-fried karaage chicken, octopus pancakes and a few sides – plus a handful of craft beers, shochu and saké.
