Serving Soho for nearly 20 years, the London Academy of Bartenders (LAB) is the Hogwarts of the cocktail world – and its reputation as a crucible of invention lives on under its current management. Squeeze into the Swinging 60s-style bar or descend to the vaulted party den below and fall under the spell of the ‘clever stuff’ – right up the swanny (Sipsmith gin, Gancia Rosso vermouth, absinthe, Grand Marnier and bitters), burnt breakfast martini with its crème brûlée top, or Jaffa fake (a rummy chocolate orangetini for kidults). Also check out ‘slushy stuff’ such as green-eyed monster – a disco drink that combines currently fashionable green Chartreuse and blue Curaçao with lime and pineapple. Otherwise, try LAB’s Jack Bauer sour– unless you’re on the wagon, in which case it’s ‘rubbish stuff’ (a mocktail) for you.
