Formerly executive chef at the highly rated Astrid y Gastón group, Martinez is currently chef/patron at the Central Restaurant in Lima itself, & the new venture will borrow some of its themes. ‘Cocina peruna’ is a melting pot of flavours & influences mixing native traditions with influences from European & Asian settlers; it’s also one of the fastest growing gastronomic movements around, with high-profile supporters including Ferran Adrià – so watch this space.
