Sushi, sashimi and saké are the holy trinity at this upscale, but deliberately casual Tokyo-style eatery within the plush Park Plaza Hotel. A virtual fish tank is illuminated behind the counter, where lone diners can always find a perch; otherwise ask for the ‘Big Ben table’ when booking (self-explanatory, really). Apart from a few appetisers such as beef tataki or sliced scallops with mizuna and jalapeño sauce, the menu is succinct and conservative with a few delightful touches. Fatty tuna belly (toro) and oily yellowtail (hamachi) are two highlights, though hand rolls such as marinated salmon belly are also worth a punt. Asahi beer is fine for a casual sip, but saké is the connoisseur’s choice: look for choryo sawasawa (a cloudy, sparkling version double-fermented like Champagne) or yamato shizuku (‘with marzipan, nuts and koji on the nose’).
