This small, unprepossessing dive bar may be styled like a janitor's office in a two-bit New Mexico motel, but thanks to head honcho and cocktail legend Dick Bradsell, it's a Soho hole-up to know. No wonder the neighbourhood's drinks-savvy movers and shakers descend on the place in droves (expect to be vetted at the door during peak hours). Unofficially this is ‘Dick's Bar', although it's better known as the Baja Room or the Pink Chihuahua – also the name of a signature mix of Tequila, cranberry juice and grapefruit. Other world-class Latino lovelies built on premium hooch include daiquiris, margaritas, martinis and mules with a big kick – you name it, Bradsell is your man. Prices encourage experimentation, while bottles of Bohemia, Pacifico and Negra Modelo beer may encourage some spontaneous shape-throwing as the hour grows wee and small.
