Starting off with the appetisers, choose from a pickle tray, king prawn bhuna puree on puffy bread, or the diced garlic aloo chat which is infused with a rich, thick sauce. Fusion appetisers include delectable Scottish salmon subtly marinated in tantalising spices, tenderly baked in a clay over, a dish of king scallops tawa fried in olive oil with garlic, capsicum, onion, lemon juice and chaat masala, and duck shashlik, tender and barbecued in the clay oven.
Flute Signature's award winning dish is the chicken tarka - consisting of thinly sliced chicken tikka stir fried with peppers, spring onions, baby corn, baby carrots, and a garlic tarka sauce. The clementine duck also stands out on the menu, barbecued and lightly covered with a refreshingly finessed orange sauce, and the modhu minty lamb aloo of tender chunks of lamb infused with honey and fresh garden mint, served with baby potatoes in a thickened sauce.
