Anna Hansen doesn’t do things by halves: she carved her way onto the London restaurant scene via an impressive stint working for Fergus Henderson (St. John), before co-opening The Providores in 2001, followed by solo debut The Modern Pantry in 2008. Seven years, a cascade of accolades and an MBE later, the chef is putting the finishing touches to The Modern Pantry Finsbury Square. As with the Clerkenwell site, this restaurant and tapas bar will be housed in a Georgian building, the high ceilings and arched windows paired with styling inspired by Hansen’s Danish roots: expect blown glass lamps, ironwork alongside oak and teak, and a dark blue and white colour palette. Long-time collaborator Rob McLeary will be in charge of the kitchen here, producing the likes of Dhansak-spiced rose veal mince omelette and smoked mussels with avocado for the all-day tapas bar. The restaurant will spin out internationally-flavoured plates such as confit duck salad with anise-marinated black fig, Cornish cod battered with squid ink and devilled quail with yuzu crème fraiche. Meanwhile, drinks will cover sherries by the glass, cocktails and French, Italian, Kiwi and Californian wines for City oenophiles. With the newly opened Yauatcha and José Pizarro et al at Broadgate Circle and now this, City workers are in for a tasty summer.
