been cooking for three decades, taking inspiration from writers such as Elizabeth David and Jane Grigson when it comes to sourcing and seasonal produce. A starter of duck liver parfait studded with
port-infused morello cherries might be followed by loin of venison with curly kale and a rich red wine sauce, while those watching their waistlines might think twice before ordering calorific
desserts such as steamed apple and gingerbread sponge.
