This contemporary fusion Japanese restaurant is part of the Maki chain, which has outlets in Kuwait and Bahrain – and now its first branch outside the Middle East. It’s owned by Canadian-Lebanese brothers who have invested in proper talent in the kitchen. Executive head chef Louis Kenji Huang, former head sushi chef at Nobu, is clearly out to satisfy his gastronomic curiosity with a menu that shows global influences both in ingredients and technique, while remaining Japanese at heart. Signature dish the Oliver Maki roll involves eight rolls in one – a voyage of flavours on a single plate. Regulars are encouraged to design their own versions, which appear duly namechecked on the menu if they pass muster with the management – very cool for client entertaining.
