The very talented Mr Mat Follas has had mixed fortunes since winning MasterChef 2009 with Wild Garlic and other ventures folding along the way. He’s now to be found, cooking solo two evenings a week, at the boutique Casterbridge Guest House in Dorchester – offering diners a choice of a three-course menu or a six-course tasting extravaganza built around foraged and unusual ingredients. Typical offerings from his ever-changing repertoire might include red onion tarte Tatin with goats’ cheese and dandelion sauce, rabbit lasagne topped with Gruyère and served with potatoes roasted in goose fat or fillet steak with smoked mash, seasonal veg and béarnaise sauce. For afters, keep it lively by ordering cardamom pannacotta with rose and pomegranate or rhubarb and whisky crumble with pistachio crumb. Reservations essential.
