The view's the thing at the Galvin brothers' most spectacular London restaurant – but it's not the only thing. Up on the 28th floor of the London Hilton, with something to gasp at on all sides, those clichés about 'bad food and good views' are thoroughly confounded by head chef Joo Won's take on the Galvin classics. Typically classy French-with-a-passport dishes run from seared yellowfin tuna with aubergines, green beans and sweet soy vinaigrette to roast loin and ragoût of venison with red cabbage, salsify, dark chocolate and proper roasting jus (showing fitting confidence in the good stuff). Cheeses are excellent, which perhaps explains a dessert of white chocolate and goats' cheese cream with figs, black sesame sponge and Roquefort ice cream. Service led by celeb maître d' Fred Sirieix is "superior", as is the "fabulous" wine list – though one reader notes the straight-backed decor kindles a rather formal atmosphere.
