Surrounded by 2,000 acres of formal gardens and landscaped grounds, grandiose Fawsley Hall was custom-built for regal entertaining, and has played host to everyone from Henry VIII and Good Queen
Bess to dignitaries of more recent vintage. That said, it’s a decidedly 21st-century set-up with conference, wedding and beauty facilities all playing their part, plus a swanky candlelit restaurant
called Equilibrium in what was the original Tudor kitchen (complete with a massive inglenook). Expect luxurious, complex food along the lines of yellowfin tuna sashimi with lime oil, pressed
tomatoes, wasabi rouille and caviar, ahead of roast Anjou squab with foie gras cromesquis, confit leg, braised beetroot and roasted walnuts, plus tricksy desserts such as malt custard with brioche,
toasted oats and mandarin jelly. Lunches and more informal meals are served in the Bess Brasserie.
