Consistency is the key at this superior restaurant, elegantly quartered in a fine Georgian house that was once home to Lord George Lennox. Views over the Sussex countryside form a backdrop to
friendly & professional service, while Darren Brown’s French-accented cooking is accomplished enough to have gained a Michelin star in 2008. Start perhaps with ravioli of lobster with samphire
& shellfish foam, while possible mains include loin of cod with Puy lentils, crisp spring onions & broad beans, or Gressingham duck with Savoy cabbage & a red wine sauce. Assiette of
lemon – tart, mousse, posset & sorbet – is a good way to finish. There’s a good choice of wines by the glass or bottle. Lovely bedrooms, too.
