Stein protégé Jamie Porter honed his craft at the Seafood Restaurant in Padstow, so it’s no surprise that Cornish fish takes pride of
place on his main menu. Supplies from the region’s day boats are used for a roster of dishes ranging from steamed lobster with shellfish sauce and fragrant green herbs or pan-fried turbot with
pickled cucumber and oyster emulsion to a cheeky take on fish and chips. Meat eaters and veggies also do well – think pork fillet and cheek with pickled girolles, apple purée, soy and crackling or
a combo of seared haloumi, piquillo peppers, aubergine caviar and tempura courgette flower. Simpler daytime food is available in the Sea Side bistro.
