Acknowledged as possibly the most seasonally true chef in London, Theo Randall left the River Café in March 2006 having worked there as head chef and partner for many years. He spent the summer of that year travelling through Italy and France to source ingredients for the launch of his eponymous restaurant. Despite his Italian passion, Randall’s skills are classically based; his career was launched in 1986 with four years at Chez Max in Surbiton. From here he went on to spend three years at the River Café before taking a year out to work at Alice Waters’ legendary restaurant Chez Panisse in Berkeley, California. After his return to the River Café, the Hammersmith icon gained a Michelin star in 1997.
