Nick has been developing the menus for DoubleTree by Hilton Dunblane Hydro for sixteen years, having launched his flagship restaurant in the hotel. Together with executive head chef Brian Scanlin, they have developed dishes that use locally-sourced produce with a farm-to-fork philosophy. Drawing on Nick’s Scottish heritage, the menu features a selection of classic Scottish dishes infused with a signature twist. Starters include soup of the day; chorizo and manchego tart; polenta, sun-dried tomato and parmesan croquette; and Nick’s cured smoked salmon. For mains, there’s sirloin steak; roast of the day; loin of cod; and pan fried gnocchi with a selection of sides, like skinny fries, creamed potatoes and sauteed greens. There’s a wide selection of desserts including dark chocolate fondant cake; orange and almond cake; and apple tart.
