Half German, half Japanese chef Angelo Sato has worked in some of the restaurant world’s biggest hitters, including Restaurant Gordon Ramsay and Trinity, as well as being head chef at South Bank’s Restaurant Story. Now, he’s opening his solo debut which is a grab-and-go concept inspired by kaiseki-ryori, which is a traditional Japanese multi-course meal.
On the menu, you can find shokuji, which is a rice course typically served alongside a miso soup and pickles, and chirashi, which refers to raw fish that is mixed with sushi rice, instead of being rolled.
