Chef/patron of Odette’s Bryn Williams will open a new restaurant in his native north Wales this November.
The as-yet-unnamed restaurant will be located in the seaside town of Colwyn Bay, in a brand-new building called Porth Eirias, which was built earlier this year right on the waterfront.
A former head chef from Odette’s – also originally from north Wales – will run the kitchen, but the team is
remaining tight-lipped about their identity. Once the restaurant launches in mid-November, Williams expects to spend one to two days per week overseeing the day-to-day running of the business;
however, in the long term he plans to concentrate his attention on his London restaurant.
Williams and his team have been working on their plans for the new restaurant for the past six months.
‘The Colwyn Bay restaurant will be more informal than Odette’s, and the dishes on the menu will use mainly locally sourced ingredients,’ said David Allan, Odette's restaurant manager. ‘We are
playing around with names at the moment – although it is likely that the name will reference both Bryn and Porth Eirias.’
Porth Eirias has been built as part of Colwyn Bay’s £52m regeneration project; Williams’ restaurant will be the building’s flagship site. As part of the area’s regeneration, the beach has been
raised by four metres; the next phase is to repair and improve the pier.
Williams grew up in Denbigh, North Wales – about 20 miles from Colwyn Bay. The bistro will be his first non-London venture.
