Sustainable dining is the mantra at Andrei Lussmann’s chic cluster of fiercely independent local brasseries that champion artisan producers and put weight behind ethically sourced organic and free-range produce.

Stylish contemporary interiors set the tone, with an abundance of polished oak, steel and glass, while the seasonal menu picks up ideas from around the globe. As the name suggests, fish and grills are the headline acts (wild sea bream with Chichester clams, garlic, anchovy and cherry tomatoes, for example), but the line-up also takes in the likes of Wobbly Bottom goats’ cheese arancini, Label Anglais coq au vin, steak-frites, organic lamb with North African spices and char-grilled vegetable paella with locally produced haloumi.

To finish, honey and thyme pudding vies with Grand Marnier crème brûlée, while beers and wines are in keeping with Lussmanns’ green ethos.
