Rosa’s Thai Cafe founder, Saiphin Moore, set up her first noodle shop in Thailand aged just 14, and hasn’t looked back. Now, following the success of the Rosa’s Thai Cafe chain, which Moore runs with her husband Alex, the pair are set to launch a new Chinese-influenced noodle restaurant concept, Hoh Sek Noodles, near the Tower of London.
Hoh Sek, which means 'delicious' in Cantonese, is a celebration of the world's finest noodles as curated by Saiphin, who has travelled widely in Asia and lived in Hong Kong. As such, a core menu known as ‘Saiphin’s Six’ – six noodle dishes with Asia-wide influences – will be on offer during the day, while a range of more substantial dishes from a seasonally changing menu of sharing plates make up the evening menu.
The final menu has yet to be confirmed, but hungry punters can expect dishes such as red fermented tofu soup with flat noodles, prawn, squid, fish ball, water spinach and bean curd, and pork noodle soup with rice noodles, roasted pork, long beans, celery, coriander, bean sprout and lime. Hoh Sek will also feature a weekly specials board with some of Saiphin’s own home recipes, and play to host to one-off supper clubs too.
