The tasting menus have been created by head chef, Adam Maddock - a Devonshire born and raised chef with 10 years of culinary experience working in kitchens with no less than one Michelin star. Using ingredients from the hotel's very own garden, Maddock has created dishes that highlight the incredibly fresh ingredients in exciting ways.
Diners are treated to a five or seven course tasting menu that features the best of seasonal, local produce. The menu at the time of writing includes luxurious dishes like scallops with cucumber, caviar and Champagne oyster sauce, suckling pig with broad beans and ewe's curd, and a gorgeous blackberry cheesecake with meadowsweet and honey.
There are also five and seven course vegetarian tasting menus available, including dishes like Jersey Royal potatoes with pickled cucumber, salt-baked celeriac with smoked leek puree, hazelnut and truffle, and a spelt risotto with broccoli, broad bean and pear. A passionfruit martini is the perfect way to finish off the evening; although, if you wish to extend your stay longer, you can always opt to book a room for the night and experience breakfast in the morning.
