The Dining Room at Lime Wood Hotel
The long-awaited reincarnation of what was Le Poussin at Parkhill is a beauty, & the £30m redevelopment has really delivered. Top designer David Collins’ chic, clean-lined modernity certainly
ticks all the style boxes & includes an inner courtyard with a huge retractable glass roof & a sexy, intimate bar. You can eat in the charmingly informal Scullery or wallow in the high-end
culinary aspirations of the glamorous, ash-panelled Dining Room. Here, Luke Holder’s light, modern British cooking is as well dressed & peppered with luxury as everything else: expect anything
from hand-dived Portland Bay scallops served with cauliflower, wild garlic & almonds to foie gras-stuffed monkfish with peas & morels. Desserts might lead off with a signature passionfruit
soufflé, the wine list is a real corker, & service is out of the top drawer – although wholly in tune with the unstuffy Lime Wood ethos.
