The Collyweston Slater is a handsome village inn restyled in a light, modern way that incorporates restrained colours & modern brasserie furniture – striking just the right balance between the
familiar & the novel. The kitchen adopts a straightforward, no-fuss approach for the bar crowd, delivering homemade burgers, sausage with champ & onion gravy or lasagne with garlicky dough
balls, while upping the ante in the dining room: pork belly is cooked in a water bath & served with dauphinoise potatoes, black pudding & crispy crackling, while wild sea bass might appear
with beetroot purée, oxtail & horseradish salad & beetroot risotto. Open fires are also part of the charm, & five smart bedrooms make this a great weekend getaway.
