Squaremeal Review of Sticky Walnut ?

Funky young chef (and master of crowd-funding) Gary Usher has done a terrific job here, turning the Sticky Walnut into a “great local bistro” noted for its “consistently fantastic” food and “wonderful staff”. Gary’s upbeat, sparky cooking matches the restaurant’s offbeat vibe with some “exceptional” ideas amalgamating influences from the Med and beyond – all served at very reasonable prices. Thankfully he doesn’t overplay the ‘walnut’ theme, preferring to channel his energies into intriguing dishes such as swordfish crudo with rice-vinegar granita, rhubarb, asparagus and taramasalata or charred leeks with pickled mushrooms, potato gnocchi, Jersey royals and feta cheese. Meat riffs sound a tad more conventional (think roast veal with peas, girolles and apricot purée or côte de boeuf with béarnaise sauce and Parmesan chips), while desserts might include wacky ideas like toasted porter ice cream with baked treacle, caramel, peanuts and Armagnac prunes. The food is complemented by some intriguing world beers, trendy aperitifs and a well-spread list of gluggable wines with gentle mark-ups. “A must for all foodies”, chimes one fan – and we’re not about to disagree.

    I’m already slightly biased towards Sticky Walnut, before I even begin. I like them, I like their work ethic, I like how they do things, and this was long before I visited. And I like them so much that when their crowdfunder for their second restaurant, Burnt Truffle appeared on my timeline, I contributed.

    As part of the crowdfunder, different people got different rewards. Mine was a lunch for two, three courses, and this was, selfishly, the whole reason for our trip to Chester. To treat Mr GFB (I know, again, but the poor man does have to put up with me after all) and myself to something special...

    My first proper blog post, and what better way to start than the Sticky Walnut in Hoole (nr. Chester), currently one of Cheshire’s most talked about restaurants.
