Head Scoutmaster at this eco-minded cocktail lounge is Matt Whiley, one of London’s Premier League libationists, whose considerable skills are also showcased at Peg + Patriot. Here he aims for zero waste in creating cocktails defined by their natural, often foraged, ingredients rather than their base spirit. Ten seasonal concoctions are offered, developed in a basement lab (where pre-booked masterclasses are held) and prepped in an open kitchen that takes the place of the expected bar. ‘Cherry’ relies on cherry bark and the fruits of the whitebeam tree – its scarlet berries a common British sight – alongside the mastic resin that gives this progressive gin Martini a vivid Aegean bouquet. Similarly interesting is a beetroot, chocolate-husk and rum fix. Providing back-up there’s an all-British natural wine list, craft ales and small-plate cheese and charcuterie snacks. ScandinAsian-style minimalist surroundings also help make Scout a sophisticated foil to Shoreditch’s cheaper, loud party bars.
