Pizza, that simple concoction of bread and topping originating from Naples, has been much debased and maligned, but Hove’s little local pizzeria (which also delivers) seems to have gone back to the basics to get it right. The sour-dough bases, made from a starter that began life in Sardinia 150 years ago together with proper 00 flour, take three days to mature, and have that crispy savouriness that only proper pizza has. They’re bringing other essential ingredients over as well – San Daniele ham, bresaola and wild boar prosciutto, which are all featured on their authentic meat pizzas, are the real thing, as is the olive oil and the cheese. Happily though, they've looked to the Sussex countryside for the rest of the meats and for many of the vegetables for the vegetarian and vegan pizzas on offer. Don’t expect frills, just the real thing.
