Squaremeal Review of Maze Grill Park Walk ?

Inspired by the grill rooms of Manhattan, this outpost of Gordon Ramsay's Maze Grill occupies the old Aubergine site where he won his first Michelin star. Now it's a casual-chic venue serving signature rare-breed beef (including Wagyu triple-seared fillet) to the Chelsea set against a backdrop of exposed brick, copper lights and close-packed tables. Immaculately presented sushi and sashimi provide the zingy opening salvos from a fairly priced menu that majors on plump, juicy steaks – cooked exactly as requested and served on heavy wooden boards alongside sweet-tasting roasted vine tomatoes. Simple sides and sauces play a supporting role, while desserts offer light relief in the shape of, say, frozen lime yoghurt with crumbled meringue. A short but sweet cocktail list suits all tastes, the extensive wine list is a comfortable fit for the food, and "sublime service" ensures this is "yet another jewel in Ramsay's crown".

Maze Grill Park Walk is yet another jewel in Gordon Ramsay's Crown

I was invited to attend a preview lunch last Sunday before the official opening on 22 April 2015. The restaurant looks chic and understated from outside. The staff on reception were friendly and helpful. We were shown to a table for 2 at the back of the restaurant. The waiters were polite and attentive and the menu came quickly. We ordered our drinks and the waitress then ran through the special of the day and the various options on the menu. She was enthusiastic and informed about the choices...

    Curious London :: Lose yourself in Maze Grill's epic meat fridge | Curious London

    I’ve always had a bit of a thing for Gordon Ramsey. I can’t really explain it; it’s something my friend Maxine has always described as ‘sexy ugly': the phenomenon of weird-looking guys with an inexplicable pull. I think it might have something to do with his hard-ass television persona; one can just imagine being thrown on to an immaculate granite-topped kitchen island and reduced to a trembling souffle.

    But this post is not about Ramsey’s mysterious sex appeal, but his new restaurant, Maze Grill in Chelsea. It specialises in sushi and steak, an unusual combination that the cynic in me suspects has been designed...

    The Z Factor :: Restaurant review - Maze Grill, Park Walk, SW10 | The Z Factor

    I judge people who eat their steaks well done. Even medium actually. For me a steak should be served medium rare at the most, and nice and pink in the middle. Let’s not be squeamish sissies about this, a cow has given its life so you can eat it, so get the job done properly.

    What do you get when you mix steak and sushi together? Either something disastrous, or maybe just a restaurant that happens to serve both in separate dishes. That is exactly what maze grill produce in their kitchen. It also happens to be a restaurant by the Hell's Kitchen of Gordon Ramsay. I am a huge fan of Gordon Ramsay, ashamingly I have not been to any of his restaurants not even his flagship three Michelin stars restaurant. When I heard there was a new maze grill opening, I knew I had to go.

Signature recipe: Cauliflower Salad

Serves 4

Ingredients
For cauliflower salad:

1 cauliflower head
Zest of 2 lemons
50g chopped caramelized almonds (see recipe)
10g chives
10g dill
Pinch of Maldon salt
Vinaigrette (to taste — see recipe)

For caramelized almonds:

200g almonds
20g sugar
1 egg white
Pinch of salt
30g cajun spice mix

For vinaigrette:

200ml oilve pomace oil
100ml olive oil
100ml apple cider vinegar
1 garlic clove (blanched three times to take the acidity)
½ shallot onion
30g honey
1 branch of thyme 
A couple of black pepper corns and coriander seeds

For cauliflower purée:


1 head of shredded cauliflower 
100g unsalted butter
100ml milk
Pinch salt
Juice of 1 lemon
 
Method
1. For the vinaigrette, mix together all the ingredients except the honey. Tightly seal with cling film and let the mixture mature for 3 days at room temperature.  After three days, pour the vinaigrette through a sieve, and mix the honey in. Using a hand blender, blend together until it emulsifies.
2. For the caramelized almonds, mix the almond with sugar, egg white, pinch of salt and cajun spicemix.
Put the mixture on a baking tray and into the oven, pre-heated to 180C, for five minutes. Mix the almonds again and cook five more minutes, then cool before roughly chopping.
3. For the cauliflower purée, put the butter in a large pan and melt slowly without burning. Add the shredded cauliflower, season with salt, mix it well and cover the pan. Cook the cauliflower for five minutes at a low heat, moving the pan constantly so that it doesn’t get color. After five minutes, take off heat and allow to cool slightly. 
Put the cooked cauliflower in a blender with lemon juice and blend for 20 minutes or until it becomes very smooth. Taste for seasoning. Add more lemon juice or salt if needed. 
4. To assemble, put the cauliflower pure in the bottom of the serving plate. In a mixing bowl, mix together the shredded cauliflower, chopped chives and dill, lemon zest and chopped almonds.  Season with vinaigrette and Maldon salt, if needed.  Serve salad on the top of the purée.  Finish the salad with grated Parmesan cheese and few chopped almonds.
