Since launching Le Champignon Sauvage back in 1987, David and Helen Everitt-Mathias have turned this Cheltenham champion into a treasured local (and national) destination famed for its highly personal approach and exquisite, two-Michelin-starred food. “Astonishingly, they’ve never missed a service during that time”, adds one appreciative fan, who also marvels at the “astonishingly good value” to be had here. David applies red-hot technique to top-drawer produce and seasonal pickings, creating a procession of peerlessly subtle flavours and studiously fashioned plates ranging from butter-poached lobster with Jerusalem artichoke, pear and sorrel to saddle and slow-cooked breast of lamb with pine-kernel cream and wild garlic pesto – two favourites from recent meals. Other hits have included a pressed terrine of Cornish ray, leek and potato as well as a dish of rabbit loin, rillettes and parfait with watercress, while desserts feature a fabulous passion fruit tart with coconut sorbet and mango salad (“I could eat that all day”, confesses one satisfied soul). Meanwhile, David’s wife Helen and her team “continue to exceed expectations”, delivering service that’s “second to none”. There’s an excellent and “very reasonably priced” wine list too.
