City restaurant Refettorio – whose reputation for quality Italian food is bolstered by Giorgio Locatelli, who loans one of his chefs to the kitchen – is launching a white truffle promotion until
the exclusive delicacy’s short season ends in mid-December.
Best eaten as part of simple dishes, the truffle lends itself to foods that bring out its pungent qualities, such as scrambled eggs on toasted ciabatta, or pan-fried veal chop with truffled mashed
potatoes. Both of these dishes will be available during the truffle season as part of a four-course menu devised by head chef Alessandro Bay that celebrates this seasonal treat.
