White Asparagus Season at the Four Seasons

Spring heralds the beginning of ‘White Asparagus Season’, which Lanes Restaurant executive chef Bernhard Mayer cites as his favourite culinary season. Famously considered an aphrodisiac, the white asparagus is known for its mild & sweet taste, & is generally acknowledged to be finer than its green or purple cousins. Guests who visit the restaurant between 14 May - 8 June will be able to enjoy innovative dishes especially created to celebrate the ‘queen of vegetables’, including marinated white asparagus with crabmeat salad or white asparagus soup with potato-herb fritters. Also on the menu are renowned favourites such as steamed white asparagus with hollandaise sauce & new potatoes, or the legendary white asparagus mousse with vanilla poached strawberries.
