Specialist Italian cooking school La Cucina Caldesi in Marylebone is holding a special class on 25 May focussing on the use of umami in Italian cooking. Discovered relatively recently, umami is the
fifth basic taste (alongside sweet, salt, bitter and sour) now being recognised in the west after years as a basic tenet in Japanese cooking. Italian cooking uses lots of umami food, such as
truffles, mushrooms, Parmesan, Parma ham, tomatoes and anchovies, and all the recipes prepared during the class will demonstrate this intriguing fifth taste. The class will take place from
