Seafood and wine pairing evening at Le Vacherin

On Monday 19 March, Le Vacherin will host a food-and-wine pairing event that matches fish and seafood with specially chosen wines from south-west France, courtesy of wine importer Les Caves de Pyrène.

The five-course menu includes new twists on French classics, such as skate rillettes with diver-caught scallops, sourdough, sea beets and capers, matched with a citrusy 2010 Jurançon Sec from Clos Lapeyre, and fresh flavours from further afield, such as stone-bass ceviche with crab beignet, ginger, pickled cucumber and coriander, paired with a delicate and spicy 2010 Gaillac Blanc, Domaine d'Escausses, La Vigne de l’Oubli. For dessert, indulge in lemon-curd macarons, matched with the elegant 2010 Domaine du Tariquet, Gros Manseng, Premières Grives, Côtes de Gascogne.
