Taking a regional approach to this year’s must-do, the cookery class, Conran’s Almeida Restaurant & Bar in Islington has recently launched a program of classes that all focus on a different
region of France. And with the cookery demonstration followed by an introduction to regional aperitifs at the bar, ahead of a dinner with specially selected wines (again, regional), there’s plenty
on offer for foodies and wine buffs alike. Head chef Ian Wood takes participants through a selection of typical recipes – the recent Provence class included salade niçoise, coquilles St Jaques à la
Provençal, navarin d’agneau, and crème brulée – and while there’s no hands-on action on the day, everyone’s sent off with a full set of recipes to try at home, so bring a pen to take note of all
the useful chef’s tips. Unusually, there is no rush to get post-class meals out of the way before ‘proper diners’ arrive for dinner, so prepare also for a drawn-out meal in the restaurant, where a
