Raw Gastronomy Classes at Saf


The arrival of vegan and raw food specialist Saf earlier this year proved that healthy eating need not be dull. And if you'd like to learn how to create some of Saf’s inventive dishes at home, then try one of its cookery classes, led by executive chef Chad Sarno. Guests will learn how to make vegetable dishes more interesting and innovative, the basics of raw food, plus how to create some of Saf's signature dishes. For those with a sweet tooth, sous chef and chocolatier Amy Levin heads up two classes, one focusing purely on chocolate, the other on pastry.

An Introduction to Raw Gastronomy
15 & 29 July, 12 & 26 August 2008 from 5-7pm
£75 per head, 30 guests maximum

Includes demonstration of how to cook Saf’s innovative signature dishes such as cannelloni with almond-caper ricotta and beetroot ravioli with cashew-chive soft cheese.

A Passion for Chocolate
22 July & 19 August 2008 5-7pm
£65 per head, 30 guests maximum

Includes discussion of the history of chocolate making and its nutritional value, chocolate tasting of almond fudge, ganache fondue, and truffles. Guests will receive food samples and recipes to take home.

Intensive Day Course in Raw Culinary Arts
3 & 31 August 2008 11am-5pm
£225 per head, 15 guests maximum

Includes lecture and demonstration as well as hands-on training in the basic philosophy of raw cuisine, herbs and spices and presentation. Students create a full menu in Saf’s kitchen including the likes of macadamia caprese and mushroom satay with smoked barbecue sauce. At the end, guests will dine with chef Chad Sarno and sample the food they’ve created.

A Taste of Sweet Summer: An Introduction to Saf Pastry
5 August 2008 5-7pm
£65 per head, 30 guests maximum

Includes demonstration of how to make strawberry and lavender gateau with cacao berry consomme and chocolate amaretto cake with vanilla-poached sour cherries and vanilla cream.
