Oyster Season at Bluebird

To celebrate the beginning of the oyster season, the new look Bluebird restaurant in Chelsea will be serving an Oyster & Champagne menu from 1 September to 31 October 2007. Executive chef Mark Broadbent has created a menu with a selection of oysters sourced from Wright Brothers & served with condiments & a selection of Champagnes, which can be enjoyed at the crustacea bar or in the restaurant.

The list of oysters includes the following:

Duchy of Cornwall native oysters – from the only remaining oyster fishery in the world on the Helford River, Cornwall; the oysters are still dredged the traditional way, under sail. This native is a sweet mollusc with lots of Cornish metallic minerals.

West Mersea Pearls – from Essex, a historic area for oysters dating back hundreds of years; they have a characteristic mineral flavour typical of the marshy beds of West Mersea.

Spéciales de Claires Premier Cru – from Marennes Oleron, south west France. These delicate oysters have a sweet, nutty & clean flavour with a long, mineral aftertaste.
