Ransome’s Dock chef patron Martin Lam has marked the start of mutton season with a special dinner as well as some
additions to the menu. Lam, a member of the Mutton Renaissance campaign to support British sheep farmers, aims to re-introduce mutton to local diners.
On 7 November, Ransome’s will present a special dinner hosted by Andrew Sharp, a master butcher from Furness in Cumbria. The four-course set menu will kick off with a warm salad of smoked haddock,
potato and watercress with verjus beurre blanc followed by braised Herdwick mutton and vegetables, and rounding off with English farmhouse cheese and apple and brioche charlotte with vanilla
custard. Each course is matched with a different wine and all guest will receive a glass of Champagne on arrival. Dinner is priced at £60 per person, which also includes water and coffee.
