Throughout August, Christian Sandefeldt, chef-patron of Deep restaurant in Chelsea, is hoping to introduce a rival to the usual summer BBQ; the crayfish party. One of the biggest food events in his
home country, Sweden, it enables diners to enjoy crayfish accompanied with bread, cheeses and shots of Aquavit. For just £95, groups of four will be offered platters of fish simmered in
dill-infused water, with a bottle of Aquavit with caraway, dill and lemon. Those not to keen on following tradition and drink a shot with each claw will be offered a selection of nine bellinis,
from lingonberry to rhubarb. The restaurant has two large terraces overlooking the river.
