Christoffer Hruskova takes over Verden's kitchen

Former head chef and co-owner of Clerkenwell’s North Road restaurant, Christoffer Hruskova – who cites Copenhagen’s world-beating restaurant Noma as an inspiration – is about to set up kitchen at Verden in Clapton.

Danish Hruskova is preparing to bring a taste of the south coast and New Forest to east London, through his use of foraged ingredients including nettles, wild garlic and elderberries. These elements combine to form a limited edition dinner menu from 21 March to 5 April.

Dubbed ‘exceptional’ by Verden co-founder Ed Wyand, Hruskova’s creations for Verden will include veal sweetbread, nettles, spicy leaves and cheese whey (£10) and lamb belly with turnips, wild garlic and unripe elderberries (£14.50).
