Once the country home of Lord Byron’s sister, this striking black-and-white residence is now  popular out-of-town retreat for fans of the ‘sport of kings’ – Newmarket racecourse isn’t far away and the hotel is handy for business types seeking a bolthole outside Cambridge. Paddocks House is also noted for its restaurant – an elegant dining room done out in shades of grey, with an ornate mirror over the white mantelpiece. By contrast, the menu is bang up to date, offering the likes of cured salmon with brown shrimp croquette, seaweed emulsion and cucumber ahead of roast venison with black cabbage, figs and salsify or hake fillet with salmon and squid-ink ravioli and caviar butter sauce. A few simpler items such as braised shoulder of pork also feature, while dessert might bring bay-roasted pineapple with mango sorbet and white chocolate mousse.
