Read the thread June 2010Hi Christopher,
Is what you are describing Umani, if so you can now get it in a tube called "Taste No 5″ I have yet to try it but your comments have just spurred me on to order some.
This is a quote.
Umami is the Japanese word for the fifth basic sense of taste, after bitter, salty, sour and sweet.
Despite being known in the East for more than 100 years, particularly Japan, it is a relatively new concept to the West where only the four primary tastes are recognised.
Umami means deliciousness in Japanese, but translates best as ‘savouriness’ and provides the ‘meaty’ flavour in meat.
It is formed from glutamates being detected by receptors on the tongue and is the reason why monosodium glutamate (MSG) is used as a flavour enhancer.
It is also found naturally in meats, cheeses and mushrooms.

A Marketing & Catering Professional with 20 years experience in the catering industry.
Starting as a Kitchen Porter in Pizza Hut when I was 14 I have worked in Restaurants, Bars, Hotels, Outdoor Catering, Night Clubs, Stadiums and Exhibition Centres which has given me real insight into the trade.
I love food, I love wine, real ales and coffee but my real thing is customer service. I am not looking for perfection I am simply seeking personality, humour, a warm welcome and possibly even a wave good bye. My wife, Sarah calls me Victor Meldrew when we are eating out sometimes when she notices my blood boiling if these simple processes are not present. I feel sorry for her sometimes but my trade has done this to me.
I should add that I have worked on outside events with both of the Roux Brother (at different times) and also as Operations Manager at the Hinds Head for Heston Blumenthal.

It would have to be a mixture of starters, sociable sharing food with lots to choose from. Maybe Tapas. I love a tasty Paella. Brunch is also a favourite with eggs Benedict or for a treat an amazing cooked breakfast.
The one thing I can’t resist on a menu is Roast Beef and Yorkshire Pudding.
Equally anything cooked by my two favourite chefs
Clive Dixon (Head Chef) who won a Michelin Star in 94 for his cooking at The Lords of the Manor (This was why I went there to try it).
Rob Clayton (Head Chef) who won a Michelin Star at Hunstrete House Hotel and then maintained one at The Priory for seven years.
Equally give me a portion of Beer Battered Fish & Crispy Chips from any good old Chip Shop.
Eating Out, Cycling, BBQ, Movies, TV. I am now a father of two and love being a hands on Dad. Two Girls who keep me very busy.
The Green Mile for a film. As for a book I never have time to read any more as life is so busy.
The Cast from Friends.
Lords of the Manor (Upper Slaughter)
