SquareMeal Review of 64 Degrees

Gold Award

“The outstanding performer on the South coast for the past few years”, declares a fan of 64 Degrees – and we’re not about to disagree. Like Brighton itself, it’s edgy, hip, leftfield and idiosyncratic – a rockin’ modern eatery from veteran local chef Michael Bremner (ex- Food for Friends and finalist on TV’s Great British Menu in 2017) squirreled away in an ultra-Brightonian setting in the quirky Lanes.

It’s a thrillingly theatrical concept too, with an open kitchen occupying half the space, chefs wheeling out the dishes as and when they’re ready, and half the 20 punters perched on yellow-topped stools by the pass; if you’re after something less hectic than larky chef chat, ask for a table at the front, though bear in mind that nowhere in the tiny space could be described as peaceful.

On offer is a tersely worded, on-message daily ‘chef’s selection’ of “clever, clever” small plates (four each of meat, fish, veg and desserts). The idea is that everything is to share and it’s all “beautifully thought out” and presented with real panache –  as well as a sense of fun.

Picking at random from each section, you might have flat iron misozuko with Bovril and shallot, a fish riff involving brill, grapefruit and chilli or a veggie plate of Gorgonzola, kimchi and hazelnut. After that, keep things sweet with a Rum Bear jelly – a corpulent booze-soaked little beast that looks like a mutant from the Haribo menagerie, sitting alongside a heap of blazing-yellow sherbet.

The drinks list shows just as much character – English sparkling wines, Greek and Croatian whites, a Macedonian red, as well as classic names from Piedmont, Burgundy and the Loire. OK, your wine might be served in functional glasses, but staff are clued-up and accommodating, prices won’t cause any panic, and the whole shebang fizzes.

About

Tucked away in the Brighton Lanes, 64 Degrees is a fine dining neighbourhood restaurant from Great British Menu winner Michael Bremner, serving creative tasting menus using local and seasonal produce. Originally hailing from Aberdeen, Michael has spent time working in highly-praised kitchens including Quo Vadis in London, as well as restaurants in Thailand, America and Canada. Returning to London and the south, Michael began to develop the idea for 64 Degrees, which he wanted to be focused around using the best local produce, and where chefs are free to be as creative as they like with dishes.

The concept behind the menu is based around sharing, with the restaurant itself built around a large open kitchen so that diners can see and chat to the chefs while they work. Every year since opening, 64 Degrees has been awarded a Bib Gourmand by Michelin, which recognises restaurants that offer great cooking at a reasonable price.

The food offering is geared towards tasting menus, although there is a small plates menu priced dish by dish for a more relaxed style of dining if preferred. Examples of dishes you might expect to find on the dinner tasting menu include squid with fennel, plum and buckwheat, cod with brown butter, shrimp and hispi cabbage, and an eel bao bun with hoisin and dashi. To finish, think pears with vanilla and ricotta. The menu changes all the time depending on what’s seasonal and fresh, so you can always expect to try something new.

An optional wine flight is available with the menu and recommended by the team for the ultimate experience. However, diners are able to choose wines by the glass or bottle from a dedicated list if they prefer. Again, these are hand-picked and rotate regularly.

FAQs

Are children allowed?

Children under the age of 16 are welcome in the restaurant until 9pm to enjoy the tasting menu.

Is there wheelchair access?

There is a step leading to the restaurant and a small step leading to the toilet, too. As it is a listed building, it's not been possible to alter this. However, wheelchair users have been accommodated in the past so do get in touch to discuss.

Michael Bremner

Chef Patron

Born in Aberdeen, Micheal Bremner’s CV includes Soho stalwart Quo Vadis and a number of gigs in Canada and the US. His debut solo restaurant project 64 Degrees - which is named after the ideal temperature to slow-cook an egg - shook up Brighton’s restaurant scene with its social approach to dining (plates were all to be shared, which was not a thing in 2013, and diners were encouraged to sit at the pass with chefs doubling up as waiters). Bremner has since opened Murmur - a more conventional all-day restaurant on Brighton seafront - and had huge success on Great British Menu with his creative and at times esoteric dishes.

Wouldn’t return my £5O deposit ! Classy

To be fair I didn't end up eating here. But they wouldn't return my £50 deposit even though I cancelled 48 hrs before the reservation.
They said it was in the small print .
. I've not had this experience anywhere before . I was ripped off !!

Amazing small plates restaurant with incredible dishes and ingredients. Service is also great and there's a real theatre when watching the open kitchen at work.

Superb food with always excellent presentation, with friendly knowledgeable staff. Also really accommodating for all sorts of dietary requirements, without making you (the customer) feel like too much trouble.
