Despite selling off a couple of its hotels in 2010, the Town House Company has retained the Bonham – a chic, boutique establishment in a row of Victorian residences, just a stroll from Princes Street. Its restaurant is a rather swish number, awash with traditional fabrics & modern fittings, while the cooking is overseen by long-serving chef Michel Bouyer. Modern French cuisine rules the roost, so a typical three-course dinner might run from a paupiette of scallop & sole with wild garlic risotto & parmesan velouté, via roast quail with spinach gnocchi, mushroom & broad bean fricassee & confit grapes to caramel soufflé with praline ice cream.
