Square Meal review of The Goose:
Chef Matthew Tomkinson is proving that lightning can strike in the same location more than once – he has made this landmark restaurant his own with the award of a Michelin star just a year after taking over the business. Despite the gong, this kitchen isn’t into ostentation: instead, it sends out calendar-correct ingredients on a plate. In late winter that might mean risotto of Salcombe Bay crab with fromage blanc or crisp baked goats' cheese with roasted red pepper sauce & tapenade, followed by escalope of sea bass with Jerusalem artichoke puree, braised ‘Roscoff’ onions & buttered Brussels sprout tops. Simple ingredients are deployed skilfully, with bags of culinary know-how. By contrast, desserts such as a dark chocolate delice with poached clementines, Grand Marnier parfait & orange crisp combine lightness & indulgence. Autumnal colours & soft lighting create an air of quiet elegance inside this former pub.
