Sitting amidst beautiful grounds at the foot of Ben Nevis, this grand, airs & graces castle must be one of the best adverts for working up an appetite in the great outdoors. The kitchen continues to perform at an impressive level, delivering elegantly executed dishes presented with a modish flair, yet always allowing the flavour of ingredients to shine through. Eclectic options such as saddle of rabbit with roast Linnhe prawns & a bisque-style sauce display the high skill in the kitchen, & gin-poached loin of venison with braised little gem & caramelised figs, or, perhaps, grilled fillet of turbot with calvo nero & braised oxtail, continue the momentum. Don’t skip on dessert, as they are similarly excellent, in particular the bitter chocolate & hazelnut pave with its own sorbet.
