Square Meal Review of Bill's Restaurant Chichester ?

Greengrocer turned evangelical foodie Bill Collison set up his first ‘real food’ emporium in Lewes, before branching out and spreading his eco-friendly message across the land. Each venue delivers on its promise by offering an eclectic all-day menu alongside a vibrant display of artisan products to take home. Breakfasts range from homemade buttermilk and blueberry pancakes with bananas, strawberries and maple syrup to a full fry-up with bubble and squeak, while the extended line-up brings Bill’s fish pie topped with Cheddar and mustard mash, ‘naked’ burgers, char-grilled chicken with coriander rice and yoghurt dressing or pearl barley risotto with smoked mozzarella. Fairy cakes and toffee bonbons are sweet treats, with French lemonade and Bill’s own beer providing enterprising refreshment for thirsty foodies.

    Livelifelovecake :: Bill’s, Chichester

    Bill’s is situated in the historic Butter Market, which was designed by John Nash and opened in 1808 as a food and produce market. The restaurant is upstairs and is a sort of ‘horseshoe shape’, bright and fresh looking with dried peppers and other assorted dried items strung around with soft music playing in the background. We were seated by a part of the wall where you could look down at the entrance to the Butter Market with a glass wall and square iron grids with little chandeliers. This sounds odd but it looked fine, it just made it difficult to see who was seated across the other side of the restaurant, namely my friend Linda! We were both seated in different parts of the restaurant both waiting for each other until a kindly waiter put two and two together...

    The food chambers :: Bill’s Produce & Cafe Chichester

    Growing up with Bill’s in Lewes I loved the rustic, homey feel to it that delivered sumptuous eats that leave you fulfilled. I’ve since visited the Covent-Garden one and whilst I love the brand it didn’t feel as warm, inviting or have the authenticity about it. But if you’re new to it, you will love them all! Set in the City’s old Butter Market which has been renovated and now hosts jewellers and Patisserie Valerie, Bill’s has a small produce shop on the ground floor and a large restaurant in the top. Beautifully done and detailed touches and knowing that ‘Bill’ was there doing the finishing pieces gives a sense of care and attention still upholding this evolving set...
