Roast quail with artichoke risotto, summer truffle & stuffed leg makes a vibrant starter, ahead of pan-fried sea trout with clam vinaigrette, stuffed palourdes, wild asparagus & crab coquette, or saddle of lamb with pancetta & parsley mousse, niçoise jus, & baby aubergine.
