The ancestral home of the Cunliffe-Lister family is a stunning 30-bedroomed castle hotel set in 200 acres of Yorkshire Dales parkland with lakes, rivers & moorland. A more manageable four-acre walled garden supplies much of the restaurant’s fruit, vegetables & herbs. Chef Simon Crannage creates modern British dishes along the lines of a ‘sphere’ of pork & barley with turnip fondant, cider reduction & apple chutney, or fillet of brill teamed with Asian spiced pork belly, followed by braised local beef with pithivier of mushrooms, foie gras & roasted roots. Classic lemon tart with raspberry sorbet or rosemary-scented pannacotta with honey-roasted pear & chocolate sauce are typical desserts. The wine list offers 150 wines from 13 countries, while the cookery school is in the restored Georgian stable block is worth checking out if you want to hone your culinary skills.
